Since November 2022 La Lanterna has been offering ionized water at its tables in Puerto del Carmen, Lanzarote.

How tap water becomes ionized water

Step 1: Filtration
The internal filter filters chlorine, unpleasant tastes and odors, and reduces sediments down to 5 microns for the production of Clean Water.

Step 2: Electrolysis
The filtered water passes through several electrode plates and membranes, separating the acid and alkaline components. It is divided into OH- (hydroxide ions) and H+ (hydrogen ions).

The hydrogen ions react with the electrons given by the cathode (- charged electrode), forming H2, molecular hydrogen. The hydroxide ions remain, making the water more alkaline around the cathode. Conversely, near the anode (electrode + charge), hydroxide ions give up electrons to the anode, eventually forming O2 (oxygen). The hydrogen ions remain, making the water more acidic around the anode. The two types of water are separated by membranes and released through different pipes.
